Today seems like the perfect day to make the famous Dolly Parton Cuppa Cuppa Cake, made famous when she starred as Turvy Jones in Steel Magnolias.

But it’s a rainy Saturday here in Auckland, and it happens to be 9-25 (September 25) in the US right now. A new day that’s being celebrated as Dolly’s Day for her famous Nine to Five hit.
So I’ve got my little boom speaker on in the kitchen blasting Dolly’s hits and her easy peasy peach cake is in the oven.
To be honest, I was going to make a lemon cake today as I have tons of lemons falling from my tree. But all the recipes I looked up required a trip to the supermarket. And as I said, rain.

Then I remembered this delicious little three-ingredient peach cake that I made the day Dolly died after seeing it shared all over Facebook (shout out to Locky McNeill!)
I’ve tweaked it a little as I wanted to use a whole tin of peaches not just a cup, so added a little more flour. I also found it a little sweet, so reduced the sugar a bit.
So here we go!

Dolly’s Cuppa Cuppa Cake Ingredients
1 and 1/2 Cups of self-raising flour (if using only 1 Cup of fruit, make it 1 Cup flour)
3/4 Cup of sugar (this is plenty sweet enough with the peach juice, but the original calls for 1 Cup)
1 Can of peaches in juice (400gm). You could also use other fruit like pears, pineapple, berries or mixed fruit salad.




I sifted the flour into a large bowl, added my sugar, then chopped the peaches mostly while still in the can. Just needed to chop a few when I mixed them. Then fold the ingredients gently so as to try and keep the air in the flour.
I used a 20cm square dish, and greased it with a little butter on a paper towel.
Add the cake mix, spreading it evenly, then pop it into the oven at 180˚C (350˚F) for 35-40 minutes. Put a clean knife into the middle to check if it comes out clean, then you’ll know it’s done.
Put the kettle on and make a cuppa, and enjoy Dolly today!
